Raw Vegan Chocolate Caramel Pecan Cake

Ingredients for the cake:
  • 1 cup pecans
  • 1 cup dates
  • 1 teaspoon vanilla extract
  • 2 tablespoon cacao powder

Ingredients for the caramel:
  • 3/4 cup dates
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon 
  • 1/2 teaspoon nutmeg 
  • approx. 1 cup water as needed

Ingredients for the topping:
  • handful of pecans
  • cinnamon
  • nutmeg

Directions:

To make the cake:  process pecans on food process until they become small crumbs.  Add the rest of the cake ingredients to the pecans and process until mixture begins to stick together.  Press mixture into small (6") spring-form pan, pressing sides slightly higher than the center to "hold" the caramel.  Put cake in fridge for 4 hours or overnight.  Take cake out of fridge and out of spring-form pan onto serving plate.

To make the caramel:  process all caramel ingredients in food process until smooth, adding water as needed to get a caramel consistency.  

To put the cake and caramel together:  Pour caramel into the center of your chilled cake and spread to the sides so it drizzles down and looks sexy….oh baby!  Top cake with pecans and other nuts and spices as desired.  Enjoy with spiced nut milk!
